Meaning of "明鏡止水" is a bright and clear state of mind, free from wickedness, like a mirror without a single point of cloudiness or still water.
It has a refreshing aroma, soft flavor and smooth mouthfeel, umami and lingering taste of rice, which is typical of Meikyo Shisui, is beautifully expressed.
