This yeast is an updated version of the yeast "T-ND (Tochigi New Delta)" used in the early stages, and the developer is said to be the same Tochigi-based brewery, Watanabe Shuzo. The raw material rice is "Gohyakumangoku" grown by contract farmers in the Nishikata district of Tochigi City, including Ryoji Yamanoi.
When you drink it, you'll experience the characteristic floral aroma of "T-ND," along with a smooth sweetness and rich umami. The finish is refreshingly smooth, prompting you to bring the glass back to your lips before setting it down.
